- Ingredients
- 4 egg yolks
- 1/2 cup (125 ml) sugar
- 2 cups (475 ml) milk
- 4 tbsp (60 ml) cornstarch
- 1/4 cup (60 ml) grated fresh coconut
- pinch of salt
- vanilla to flavor
- 1 tbsp (15 ml) butter
- 4 egg whites for meringue
- baked pie shell
- Preparation
- Combine milk, sugar, and salt in sauce pan.
- Let come to a near boil.
- Stir in cornstarch and egg yolks and let cook for a few minutes.
- Add grated coconut and vanilla. Cool.
- Fill Pie Shell which has been previously baked.
- Top with meringue and brown in oven.
