- 2 Tbsp (30 ml). butter
- 2 eggs
- 2 1 lbs (.5 kg). cans chili with beans
- 1 large can hominy, drained
- 1 1 lb (.5 kg). package Velveeta Mexican cheese (mild), cubed.
- In skillet, scramble eggs in butter.
- Add chili and drained hominy.
- Simmer about 20 minutes.
- Add cheese a little at a time and stir until melted.
- Serve warm with Fritos or Tortilla Chips.
