Texas Chicken Fried Steak

  • 2 medium cube steaks (tenderized round steak)
  • 1 tbsp (15 ml) season salt
  • 1 egg
  • 1/4 cup (60 ml) milk
  • salt and peppe, to taste
  • 1/2 cup (125 ml) flour
  • enough oil to cover bottom of pan
  • Gravy:
  • 2 cups (475 ml) milk
  • 1 cup (225 ml) water
  • 4 tbsp (60 ml) flour
  • oil steaks were cooked in
  • salt and peppe, to taste
  • Steaks:
  • Rub steaks with season salt on both sides.
  • Beat egg and milk together in a shallow bowl.
  • Place flour in a separate shallow bowl.
  • Drench steaks in egg mixture.
  • Dredge steaks in flour mixture.
  • Place steaks in frying pan with hot oil.
  • Fry 10 minutes on each side or until no longer pink in the middle.
  • Drain on paper towels.
  • Gravy:
  • Mix flour in about 4 tbsp (60 ml) of the grease that steaks were cooked in.
  • Blend together over heat until smooth and brown in appearance.
  • Add water and milk and stir until it reaches the desired thickness.
Good ole Texan Food - my Mom and Granny use this recipe. It's never been written, just taught. Measurements were difficult because we never measure - just add till it looks right. But I did cook it with these and it was right.
