- Ingredients
- 4 boneless, skinless chicken breast
- Large sized jar of salsa (as hot as you like)
- 4 slices of Monterey Jack cheese
- salt (optional)
- pepper (optional)
- Preparation
- Spray large skillet with vegetable cooking spray.
- Brown chicken until almost fully done.
- Lower heat to simmer.
- Pour all of salsa over chicken.
- Add salt and pepper if desired.
- Cover and let simmer 10-15 minutes.
- Place cheese slices on chicken (one per chicken)
- Cover again until cheese melts.
- Remove from heat and serve.
- Comments
- This recipe was an experiment gone very right. I
would recommend using a Spanish/Mexican theme
when choosing side dishes. Some suggestions are
Spanish/Mexican rice, refried beans,
tortillas/tortilla chips, etc.
