Serves/Makes:8 to 10 pints
- Ingredients
- 1 peck green tomatoes
- 1 med. cabbage
- 6 onions
- 5 bell peppers {3 red for color}
- 8 cups (1900 ml) sugar
- 3 Qts. vinegar
- 2 Tbsp (30 ml). celery seed
- 2 Tbsp (30 ml). mustard seed
- 1 stick cinnamon bark
- 1 Tbsp (15 ml). whole cloves
- Preparation
- Grind all veggies coarsely and combine in large bowl.
- Sprinkle with one cup salt and let set overnight.
- Drain.
- Tie cinnamon and cloves in a spice bag (tie up in a double layer of cheesecloth).
- Combine everything and cook till fairly soft {don't overdo it}
- Pack hot into jars and seal in hot water bath for about 15 min.
