- Ingredients
- 2-1/2 lbs (1.1 kg) boneless chicken breast
- 1 cup (225 ml) rice
- 2 cups (475 ml) brocolli
- 1-1/2 cups (350 ml) montery jack cheese
- 1 can cream of brocolli soup
- 1 tsp (5 ml) garlic salt
- 3 chicken bouillion cubes
- 1 box garlic flavored croutons
- Preparation
- Cut chicken into bite size pieces.
- Brown chicken in skillet with a tsp of garlic salt.
- Put garlic flavored croutons in food processor and grind them up (like bread crumbs).
- Boil rice with 3 chicken bouillion cubes.
- steam or boil brocolli.
- Place chicken in casserole dish.
- Add rice, brocolli, cream of brocolli soup and cheese. Mix well
- Top with crumbs of garlic flavored croutons.
- Bake at 350 degrees (175 C.) F. till crumbs are golden brown.
- Serve with a side salad.

- South Alabama style. My wife likes to experiment with different food
combinations and this was one of my favorites of her creations.
