Serves/Makes:1 loaf
- Ingredients
- 1/4 cup (60 ml) butter or margarine, softened
- 1/2 cup (125 ml) packed brown sugar
- 2 eggs, lightly beaten
- 1 cup (225 ml) mashed sweet potatoes
- 3 Tbsp (45 ml) milk
- 1 tsp (5 ml) grated orange peel
- 2 cups (475 ml) self-rising flour
- 1/4 tsp (1 ml) ground allspice
- 1/4 tsp (1 ml) ground nutmeg
- 1/4 cup (60 ml) chopped pecans
- Orange Cream Spread:
- 3 oz (84 grm). package cream cheese, softened
- 1 tsp (5 ml) orange juice
- 1 tsp (5 ml) grated orange peel
- Preparation
- In a mixing bowl, cream butter and sugar.
- Add eggs, and mix well.
- Add sweet potato, milk and orange peel, and mix well.
- In another bowl, combine flour, allspice, and nutmeg. Add to cream mixture.
- Mix just until combined. Fold in nuts.
- Pour into a greased 9 inch by 5 inch loaf pan. Bake at 350 degrees (175 C.) for 40 to 45 minutes.
- Cool in pan for 10 minutes.
- Combine spread ingredients and beat until smooth.
- Serve spread in a bowl to spread on individual slices.
