- Ingredients
- Cake:
- 1 Cup (225 ml) Sugar
- 1/4 Cup (60 ml) Cocoa
- 1-1/2 tsp (7 ml) Soda
- 1 Cup (225 ml) Cold Water
- 1 tsp (5 ml) Vanilla
- 2-1/4 Cups (525 ml) All Purpose Flour
- 1-1/2 tsp (7 ml) Baking Powder
- 1/4 tsp (1 ml) Salt
- 1 Cup (225 ml) Mayonnaise
- Frosting:
- 2 Cups (475 ml) Sugar
- 1 Stick Margarine
- 1 tsp (5 ml) Vanilla
- 1/2 Cup (125 ml) Cocoa
- 1/2 Cup (125 ml) Milk
- Preparation
- Cake:
- Sift dry ingredients.
- Add water, mayonnaise and remaining ingredients.
- Mix on medium speed for 2 minutes.
- Pour into greased and floured 9 inch square pans.
- Bake at 325 degrees (175 C.) for 30 minutes.
- Frosting:
- Combine all ingredients except vanilla.
- Boil for 2 minutes.
- Beat until spreading consistency.
- Add vanilla.

- I happened to remember seeing this recipe in an old cook book of my
mother's. This was one of those church fund raisers which features
recipes contributed by members of the congregation/community.
The recipe in the book is attributed to a Mrs. Delane Dills of
Copperhill, Tennessee in 1970. I remember eating mayonnaise cake years
ago, and I'll bet this is the recipe!
