Chicken Provecale

Serves/Makes:4-5

Ingredients
  • 1 chicken (3 pound)
  • 2 tbsp (30 ml) olive oil
  • 2 cups (475 ml) dry white wine
  • 3 garlic cloves
  • 4 tomatoes, peeled and chopped
  • 2 tbsp (30 ml) black olives, pitted
  • 2 tbsp (30 ml) finely chopped basil leaves
  • salt and pepper
Preparation
  • Cut the chicken into 10 pieces.
  • Heat the oil in a large saucepan.
  • Brown the chicken well on all sides.
  • Add the wine, garlic, tomatoes, olives and half the basil.
  • Salt and pepper to taste.
  • Cover and simmer for 20 minutes or until tender.
  • Sprinkle the remainder of the basil over the chicken and serve.
