Rhubarb Crunch

Ingredients
  • 2 cups (475 ml) rhubarb, chopped
  • 3/4 cup (175 ml) sugar
  • 2 tbsp (30 ml). flour
  • 1/4 cup (60 ml) brown sugar
  • 1/4 cup (60 ml) flour
  • 1/4 cup (60 ml) rolled oats
  • 1/4 cup (60 ml) butter
Preparation
  • Arrange rhubarb in greased 9 inch x 9 inch baking dish.
  • Sprinkle 3/4 cup (175 ml) sugar and 2 tbsp (30 ml). flour over rhubarb.
  • Mix in bowl the brown sugar, 1/4 cup (60 ml) flour, and rolled oats.
  • Cut butter into mixture as for pastry.
  • Sprinkle over rhubarb in pan.
  • Bake at 350 degrees (175 C.) for 40 minutes.

This recipe came from my mother. It was the only way I would eat rhubarb as a child!
