Serves/Makes:1 9x13 inch Cake
- Ingredients
- 1 cup (225 ml) soft margarine
- 2 cups (475 ml) all-purpose flour
- 1-3/4 cups (425 ml) sugar
- 3 Tbs (45 ml). cocoa
- 1 tsp (5 ml). soda
- 1 tsp (5 ml). vanilla
- 2 eggs
- 1/2 cup (125 ml) buttermilk
- 1 cup (225 ml) Coca-Cola
- 1-1/2 cups (350 ml) miniature marshmallows
- Cola Icing:
- 1/2 cup (125 ml) soft margarine
- 3 Tbs (45 ml). cocoa
- 1/3 cup (80 ml) Coca-Cola
- 4 cups (950 ml) sifted powdered sugar
- 1 cup (225 ml) toasted chopped pecans
- Preparation
- Cake:
- Combine all ingredients except cola and marshmallows in a large bowl.
- Blend at low speed of mixer.
- Beat at medium speed 1 minute.
- Add cola and blend; stir in marshmallows.
- Pour into greased 9 inch X 13 inch pan.
- Bake at 350 degrees (175 C.) for 30 minutes or until cake tests done.
- Cola Icing:
- Combine all ingredients except pecans in small mixer bowl.
- Beat until smooth.
- Stir in pecans.
- Spread on cake.
