- Ingredients
- 2 lbs (.9 kg) fresh spinach
- 4 medium sized potatoes
- 1 egg
- 1 cup (225 ml) milk
- 1/2 lb (.2 kg) Cheddar cheese
- Salt
- Red Hot Pepper
- Pinch of nutmeg
- 2 tbsp (30 ml) butter
- Preparation
- Boil spinach until soft; then drain.
- Boil potatoes and mash them, adding salt, 1 tbsp (15 ml) butter and 1/2 cup (125 ml) milk.
- Use remaining butter to grease a straight-sided ovenproof platter.
- Alternate layers of spinach and mashed potatoes, ending with spinach.
- Grate the cheese coarsely.
- Whisk the egg in a cup, add rest of milk, cheese, salt, pepper and nutmeg and mix thoroughly.
- Pour the mixture onto spinach.
- Bake in pre-heated oven at 400 deg F until top is crisp, taking care not to burn it.
- Serve hot.

- Can also be served on toasted wholemeal-bread slices. A trace of thyme can also be added just before serving.
