Serves/Makes:1 layer cake
- Ingredients
- 1/2 cup (125 ml) butter
- 1-1/2 cups (350 ml) sugar
- 2 eggs
- 4 tbsp (60 ml) red food coloring
- 2 tbsp (30 ml) cocoa
- 1 cup (225 ml) buttermilk
- 1 tsp (5 ml) salt
- 2-1/2 cups (600 ml) sifted flour
- 1 tbsp (15 ml) vinegar
- 1 tsp (5 ml) baking soda
- Cream Cheese Frosting:
- 1/2 cup (125 ml) butter
- 1 (8 ounce) package cream cheese
- 4 cups (950 ml) confectioners sugar
- 1 tsp (5 ml) vanilla extract
- Preparation
- Preheat oven to 350 degrees (175 C.).
- Cream 1/2 cup (125 ml) butter, sugar, and eggs.
- Beat in food coloring and cocoa.
- Mix in buttermilk, salt, vanilla, baking soda and vinegar.
- Slowly add flour to mixture.
- Put batter into two greased 9 inch round pans.
- Bake for 25-30 minutes.
- Allow to cool completely, then frost with Cream Cheese Frosting.
- To make Cream Cheese Frosting:
- Combine 1/2 cup (125 ml) butter, cream cheese, confectioners' sugar and vanilla.
- Mix until well blended.
