- 1 head of cabbage leaves
- 3 tbsp (45 ml) salt
- 1 hard pear, peeled, cored and grated
- 4 scallions, finely chopped
- 1 tbsp (15 ml) sugar
- 2 tsp (10 ml) hot chili powder
- 2 tsp (10 ml) crushed garlic
- Put cabbage in a bowl and sprinkle with salt.
- Leave overnight.
- Rinse under cold running water several times then drain and pat dry.
- Place in a large jar and stir in remaining ingredients.
- Cover with a heavy weight and leave for one week before using
