Ingredients
  • 1 head of cabbage leaves
  • 3 tbsp (45 ml) salt
  • 1 hard pear, peeled, cored and grated
  • 4 scallions, finely chopped
  • 1 tbsp (15 ml) sugar
  • 2 tsp (10 ml) hot chili powder
  • 2 tsp (10 ml) crushed garlic
Preparation
  • Put cabbage in a bowl and sprinkle with salt.
  • Leave overnight.
  • Rinse under cold running water several times then drain and pat dry.
  • Place in a large jar and stir in remaining ingredients.
  • Cover with a heavy weight and leave for one week before using
