- Ingredients
- 3 cups (700 ml) mashed cooked sweet potatoes (or canned)
- 1 cup (225 ml) milk
- 2 eggs
- 1-1/4 cups (300 ml) sugar (2/3 cup (150 ml) of this to be brown sugar pressed in cup, the rest to be white sugar to complete the 1-1/4 cups (300 ml) total)
- 3/4 stick of real butter
- 1/2 tsp (2 ml) ground nutmeg
- 1/2 tsp (2 ml) ground cinnamon
- 1/2 tsp (2 ml) vanilla flavoring
- Topping:
- 3/4 stick of real butter
- 3/4 cup (175 ml) cornflake crumbs
- 1/2 cup (125 ml) chopped pecans
- 1/2 cup (125 ml) packed down, brown sugar
- Preparation
- Preheat oven to 400 degrees (200 C.).
- Grease a 1 1/2 qt. casserole dish with butter.
- Mix all the ingredients and pour into casserole.
- Bake for 30-40 minutes, until mixture is firm.
- While baking, melt butter for topping and mix in remaining topping ingredients.
- Add topping to casserole and continue to bake for additional15 mins. or until brown.
