- 2 tbsp (30 ml) oil
- 2 cups (475 ml) onions, coarsely chopped
- 2 cups (475 ml) cold cooked rice
- 2 eggs, slightly beaten
- 1 tbsp (15 ml) soy sauce
- 1/2 tsp (2 ml) salt
- Heat pan; add oil and fry onions until brown.
- Add rice and saute.
- Add eggs, season with soya sauce and salt.
- For variety add 2 C chopped cooked meat, green peppers or peanuts.
