- 1 pound of ripe plantains
- 1/4 cup (60 ml) of a light salad oil
- Peel ripe plantains.
- Cut in half crosswise; then in 1/4 inch thick lengthwise pieces.
- Heat salad oil in skillet.
- Add plantains.
- Fry till golden, about 6 to 8 minutes per side.
- Drain on paper towels and serve.
