Katherine's Squash Casserole

Serves/Makes:serves 6-8

Ingredients
  • 2 lbs (.9 kg). or (3 lbs (1.4 kg).) squash
  • 2 sticks oleo
  • 2 rolls of Ritz crackers
  • 3 cups (700 ml) grated sharp cheddar cheese
  • 2 lg. onions
Preparation
  • Boil squash, until tender.
  • In a skillet, saute 1 stick of butter and chopped onions until glossy.
  • Grate cheddar cheese.
  • In a paper bag, pour crackers in and crush them.
  • In a casserole dish layer squash,onions,cheese & cracker crumbs.
  • Bake at 350 degrees (175 C.) until cheese melts and crackers, which are on top, get golden.
  • Bake about 25-30 minutes.

My grandmother use to cook with me all the time and this was one of our favorite recipes.
