Serves/Makes:3 1/2 cups
- Ingredients
- 2 cups (475 ml) shredded cooked chicken meat (grilled, roasted, bbq, poached, broiled, etc. - just as long as it's tasty)
- 1/2 cup (125 ml) mayonnaise
- 1/4 cup (60 ml) sour cream
- 1/4 cup (60 ml) minced onion - red or white
- 1/4 cup (60 ml) minced celery
- 1/4 cup (60 ml) chopped walnuts
- 1/4 cup (60 ml) chopped pimientos or red bell peppers
- 1 tsp (5 ml) garlic powder
- salt and pepper to taste
- pinch of sugar
- squirt of lemon juice
- paprika
- Preparation
- Mix everything together and serve in sandwiches or toss some salad greens with a bit of balsmic vinegar and walnut or olive oil and serve chicken salad with greens; drizzle some vinigrette around and garnish with toasted garlic croutons.
