Serves/Makes:1 9-inch pie
- Ingredients
- 1/4 cup (60 ml) margarine
- 1 cup (225 ml) sugar
- 3 eggs, beaten
- 1/2 cup (125 ml) chocolate chips
- 3/4 cup (175 ml) light corn syrup
- 1/4 tsp (1 ml). salt
- 1 tsp (5 ml). vanilla
- 1/2 cup (125 ml) chopped pecans or walnuts
- 2 tbsp (30 ml). bourbon
- One 9-inch pie shell, unbaked
- Whipped Cream:
- 1 cup (225 ml) whipping cream
- 1 tbsp (15 ml) bourbon
- 1/4 cup (60 ml) powdered sugar
- Preparation
- Heat oven to 375-degrees.
- In large mixing bowl, cream together sugar and margarine.
- Add remaining ingredients, stir till blended.
- Pour into pie shell.
- Bake for 40-45 minutes.
- Cool 1 hour.
- Serve warm with whipped cream or vanilla ice cream.
- Whipped Cream:
- Beat 1 cup (225 ml) whipping cream and 1 tbsp (15 ml) bourbon until foamy; gradually add 1/4 cup (60 ml) powdered sugar, beating until soft peaks form.
