Serves/Makes:one 9-inch pie
- Ingredients
- 2 eggs, slightly beaten
- 1 cup (225 ml) sugar
- 1/2 cup (125 ml) all-purpose flour or 1/4 cup (60 ml) cornstarch
- 1/2 cup (125 ml) butter, melted and cooled
- 1 cup (225 ml) chopped pecans
- 1 (6-oz.) semisweet chocolate chips
- 4 tsp (20 ml). bourbon or 1 tsp (5 ml). vanilla extract
- 1 unbaked 9-inch pastry shell
- Topping:
- 1 cup (225 ml) dairy whipped topping
- 1 tbsp (15 ml) bourbon
- Preparation
- Combine first 4 ingredients in medium mixing bowl; beat with an electric mixer just until blended. Stir in chopped pecans, chocolate chips, and bourbon or vanilla extract. Pour filling into pastry shell, and bake at 350-degrees for 45 to 50 minutes.
- Cool 1 hour.
- Serve warm with flavored dairy topping.
- Topping:
- Mix 1 cup (225 ml) dairy topping with 1 tbsp (15 ml) bourbon, or to taste, until well blended.
- Chill until ready to use.
- Or add 1 tbsp (15 ml) of bourbon to lightly sweetened whipped cream.
