- 3 egg yolks
- 3 T HOT water
- 1 T lemon juice
- 1 pinch of salt
- 1 dash of tabasco sauce
- tabasco sauce, optional
- approx. 1/4 cup (60 ml) melted butter
- Cook over medium heat; whisk constantly and briskly until thick.
- Remove from heat.
- While you are still whisking, stir in melted butter, until desired consistancy.
- Make sure you use REAL butter for a perfect sauce.I use this in the
restauraunt I work at every day and it's great.
