- 1 can regular Rotel Tomatoes
- 1 can Mexican-Style Rotel Tomatoes
- 1 can Extra Hot Rotel Tomatoes
- 1 large onion, diced
- 1 bunch cilantro, coarsly chopped
- Juice of one lime
- 1 tsp (5 ml) salt
- 1/4 cup (60 ml) beer
- Pour cans of Rotel into large bowl.
- Add all other ingredients.
- Cover and let it sit an hour before serving.
