Serves/Makes:3/4 cup 
 
- Ingredients
 
  -  1/4 cup (60 ml) cinnamon chips
 -  2 tbsp (30 ml). star anise
 -  1 tbsp (15 ml). each fennel seeds, dried orange peel, whole cloves and powdered ginger
  
  
- Preparation
 
  - Grind all together until a powder.
 - Store  air-tight
 - To make cinnamon chips, crush stick cinnamon with a hammer
 -  Use 1-1/2 tsp (7 ml). to 1 tbsp (15 ml). per pie.
