Serves/Makes:1 pie
- Ingredients
- 1 cup (225 ml) light corn syrup
- 1 cup (225 ml) sugar
- 3 eggs, slightly beaten
- 1/2 tsp (2 ml) vanilla
- 1/3 cup (80 ml) chunk-style peanut butter
- 1 unbaked 9" pie shell
- 1 cup (225 ml) whipping cream
- Preparation
- Combine corn syrup, sugar, eggs, vanilla and peanut butter mixing until thoroughly blended.
- Pour into pie shell.
- Bake at 400 degrees (200 C.) for 15 minutes.
- Reduce heat to 350 degrees (175 C.) and bake 30 to 35 minutes longer (filling should appear slightly less set in center).
- Chill.
- Top with whipped cream to serve.
