Peanut Butter Pie

Serves/Makes:1 pie

Ingredients
  • 1 cup (225 ml) light corn syrup
  • 1 cup (225 ml) sugar
  • 3 eggs, slightly beaten
  • 1/2 tsp (2 ml) vanilla
  • 1/3 cup (80 ml) chunk-style peanut butter
  • 1 unbaked 9" pie shell
  • 1 cup (225 ml) whipping cream
Preparation
  • Combine corn syrup, sugar, eggs, vanilla and peanut butter mixing until thoroughly blended.
  • Pour into pie shell.
  • Bake at 400 degrees (200 C.) for 15 minutes.
  • Reduce heat to 350 degrees (175 C.) and bake 30 to 35 minutes longer (filling should appear slightly less set in center).
  • Chill.
  • Top with whipped cream to serve.
