No-Boil Tender Ribs

Ingredients
  • 1 or more slabs, spare ribs or baby back ribs,or country style ribs
  • 2 large bell peppers
  • 1 large onion
  • 2 bunches green onions
  • butter
  • barbecue sauce
Preparation
  • Light charcoal, let ash-over slightly.
  • Pour about 2 cups (475 ml) hickory chips over charcoal {you can buy a bag or hickory or mesquite chips at the supermarket for about $2.00}.
  • Place ribs on grill away from charcoal so they will smoke but not burn.
  • Smoke ribs for at least 30 minutes--be sure they don't scorch.
  • Cut peppers, onions and green onions into small pieces.
  • Remove ribs from grill and place them in heavy duty aluminun foil with pepper, onions and green onions.
  • Place about 1/2 stick of butter into each packet.
  • Wrap tightly.
  • Place ribs on far side of grill--not directly over coals.
  • Cook for about 1 1/2 to 2 hours--preferably at 250 degrees (125 C.).
  • Remove from grill and open aluminum foil.
  • Pour your favorice barbecue sauce over them,close foil,and return them to grill for an additional 30 minutes.
Comments
When you place the hickory chips on the coals, followed by the ribs, close all the dampers so they will absorb the smoke. Also make sure that you cook them very slowly; the ribs will simmer in the butter and be very tender, similar to cooking in a slow cooker. I sometimes cook mine for 3 or more hours.
