Serves/Makes:6 or more
- Ingredients
- 1/2 lb (.2 kg). feta cheese, crumbled
- 8 chicken drumsticks (I substitue boneless skinless breasts all the time)
- 1 tbsp (15 ml) plus 1 tsp (5 ml) olive oil, divided
- 1 medium onion, thinly sliced
- 2 large garlic cloves, minced
- 1 17 oz (476 grm). can plum tomatoes with liquid, coarsely chopped
- 1/2 tsp (2 ml) sweet basil (substitute rosemary, thyme, or dill if you like it better)
- pepper, to taste
- steamed rice or pasta
- Preparation
- Place feta in water to soften and set aside.
- Heat 1 tbsp (15 ml) of oil in frying pan (I use a dutch oven and double recipe for entertaining) and brown chicken pieces.
- Transfer chicken to a covered dish to set aside until needed again.
- Add the tsp of oil to the pan along with the sliced onions.
- Cook over low heat for about 6 minutes.
- Add garlic and cook for another 5 minutes or until onions start to brown.
- Add the chopped tomatoes and liquid, sweet basil and pepper.
- Place chicken pieces on the sauce.
- Cover and bring to a boil.
- Reduce to a simmer and cook 40 minutes.
- Remove feta from water and arrange on top of chicken.
- Cover and cook for another 15 minutes.
- Serve with steamed rice or your favorite pasta. We like it simply with slices of a good Italian bread or French Bread.. and a great spinach salad! A chilled glass of a good Chardonnay is a nice touch too!
- Note: If you want something more elegant for more formal occasions, use skinless, boneless chicken breasts and prepare the same.
