Sesame Chicken

Simple and Easy Chinese Meal for novice to experienced cooks.

Serves/Makes:4 or more

  • Chicken:
  • 6 chicken thighs, boned and cut into 1 to 1-1/2 inch cubes
  • cornstarch, enough to coat chicken
  • peanut oil, enough to deep fry chicken cubes
  • Sauce:
  • 1/4 cup (60 ml) soy sauce
  • 1/4 cup (60 ml) sugar
  • 1 tbsp (15 ml) sesame seeds, toasted
  • 1 1-inch piece of fresh ginger root, finely grated
  • 2 green onions, finely sliced
  • 1/2 tsp (2 ml) to 1 tsp (5 ml) sesame oil
  • chopped green onions for garnish
  • Coat chicken thoroughly with cornstarch and refrigerate for at least one hour.
  • Coat chicken again lightly with cornstarch just before frying.
  • In a medium saucepan, mix soy sauce, sugar, sesame seeds and ginger root.
  • Cook over low heat until the sugar is dissolved.
  • Stir in green onions and sesame oil, simmer for 1-2 minutes and take off heat and set aside.
  • Deep fry the chicken pieces in peanut oil at 350 degrees (175 C.) for about 3 minutes or until light golden brown.
  • Drain on paper toweling.
  • Either gently toss the chicken in the dipping sauce, or serve the dipping sauce over the chicken as a "gravy" and present it over rice on a platter or individual plates.
If you cannot find toasted sesame seeds, you can toast regular ones by cooking them in a skillet over medium heat until they are lightly colored.
