Serves/Makes:4 or more
- Ingredients
- Chicken:
- 6 chicken thighs, boned and cut into 1 to 1-1/2 inch cubes
- cornstarch, enough to coat chicken
- peanut oil, enough to deep fry chicken cubes
- Sauce:
- 1/4 cup (60 ml) soy sauce
- 1/4 cup (60 ml) sugar
- 1 tbsp (15 ml) sesame seeds, toasted
- 1 1-inch piece of fresh ginger root, finely grated
- 2 green onions, finely sliced
- 1/2 tsp (2 ml) to 1 tsp (5 ml) sesame oil
- chopped green onions for garnish
- Preparation
- Coat chicken thoroughly with cornstarch and refrigerate for at least one hour.
- Coat chicken again lightly with cornstarch just before frying.
- In a medium saucepan, mix soy sauce, sugar, sesame seeds and ginger root.
- Cook over low heat until the sugar is dissolved.
- Stir in green onions and sesame oil, simmer for 1-2 minutes and take off heat and set aside.
- Deep fry the chicken pieces in peanut oil at 350 degrees (175 C.) for about 3 minutes or until light golden brown.
- Drain on paper toweling.
- Either gently toss the chicken in the dipping sauce, or serve the dipping sauce over the chicken as a "gravy" and present it over rice on a platter or individual plates.
- Comments
- If you cannot find toasted sesame seeds, you can toast regular ones by cooking them in a skillet over medium heat until they are lightly colored.
