Leeann Chin's Sesame Chicken

Serves/Makes:6 servings

Ingredients
  • 2 whole chicken breasts
  • 1 egg
  • 2 tbsp (30 ml) flour
  • 2 tbsp (30 ml) cornstarch
  • 2 tbsp (30 ml) water
  • 1 tsp (5 ml) salt
  • 2 tsp (10 ml) vegetable oil
  • 1/4 tsp (1 ml) baking soda
  • 1/4 tsp (1 ml) white pepper
  • 1/2 cup (125 ml) water
  • 1/4 cup (60 ml) cornstarch
  • 1 cup (225 ml) sugar
  • 1 cup (225 ml) chicken broth
  • 3/4 cup (175 ml) vinegar
  • 2 tsp (10 ml) dark soy sauce
  • 2 tsp (10 ml) chili paste
  • 1 tsp (5 ml) vegetable oil
  • 1 clove garlic, finely chopped
  • vegetable oil for the wok
  • 2 tbsp (30 ml) toasted sesame seeds
Preparation
  • Remove bone and skin from chicken, cut into 2 inch x 1/2 inch strips.
  • Mix with the first 8 ingredients (egg through white pepper); stir in chicken.
  • Cover and refrigerate at least 30 minutes.
  • Mix 1/2 cup (125 ml) water and 1/4 cup (60 ml) cornstarch.
  • Heat next ingredients (sugar through garlic) until boiling.
  • Stir in cornstarch mixture; remove from heat; keep warm.
  • Heat vegetable oil (about 2 inches deep) to 350 degrees (175 C.).
  • Fry about 10 pieces of chicken, adding 1 at a time, 3 minutes or until light brown.
  • Remove from oil and drain on paper towels.
  • Repeat until all chicken is done.
  • Heat oil to 375 degrees (200 C.).
  • Fry about 1/2 the chicken 1 minute, or until golden brown.
  • Remove from oil and drain on paper towel.
  • Repeat with remaining chicken.
  • Heat sauce to boiling, pour over chicken and sprinkle on sesame seeds.
Comments
Good when made with already prepared fun see noodles or steamed rice. This recipe is most like what is found in Chinese Resturaunts.
