- Egg salad with no celery.

- 6 hard boiled eggs (finely grated)
- 1/3 cup (80 ml) mayonnaise
- 1/4 cup (60 ml) pimiento stuffed olives (minced)
- 2 tbsp (30 ml) green onions (minced)
- 2 tbsp (30 ml) parsley (minced)
- 1 tbsp (15 ml) Dijon mustard
- black pepper
- Thoroughly mix together all the above ingredients.
- Cover and refrigerate for an hour.
- Spread over your favourite sandwich bread.
