- It isn't your mother's "Ketchup Meatloaf". I prefer ground turkey, but of course you can use ground beef if you prefer.

Serves/Makes:2 or more
- 1 lb (.5 kg). ground beef or turkey
- 1 can Hunts Italian tomato sauce
- 2 cloves garlic, crushed
- 1/3 cup (80 ml) onion, chopped finely
- 2 cups (475 ml) mozzarella or Monterey Jack cheese, grated
- 1 egg
- 1/2 cup (125 ml) breadcrumbs
- salt, pepper, and other seasonings to taste
- Preheat oven to 425 degrees (225 C.).
- In a large bowl combine spices, bread crmbs, egg, onions, and garlic.
- Mix throughly with your hands.
- If the mixture is too runny, add more breadcrumbs, and if it is too dry, add some water by tspfuls.
- When mixed, spread the meat out flat on a wax paperlined cutting board (both because it is more sanitary and easier to clean).
- The mixture should be a rectangle.
- Sprinkle grated cheese onto the meat, reserving some of the cheese.
- Roll the meat up like a jelly roll or burrito with the cheese inside.
- Coat the bottom of a meatloaf dish with some of the tomato sauce and then place the meat on top of that.
- Pour the rest of the sauce over the meatloaf and sprinkle with the remaining grated cheese.
- Cover the dish with aluminum foil and bake in a 425 degree (225 C.) preheated oven for 45 minutes, or until sauce is bubbling and the meat is cooked all the way through.
- My step-mother taught me how to make this, althrough I have altered the recipie some for my own tastes. I like to season this with a little garlic powder (yes, I love garlic), oregeno, basil, onion powder, salt, and pepper. And either Jack or Mozzarella cheeses will work, although the latter seems better to me. Serve with baked potatoes and spoon the sauce from the dish onto the potato. This is one of my hubby's favorite meals.
