Humming Bird Cake

This is a recipe from my grandmother from Beckley, WV and I have won a few contests with it. It is a loved recipe for anyone who has a bite!

Serves/Makes:12 or more slices

Ingredients
  • Cake Ingredients:
  • 3 cups (700 ml) all purpose flour
  • 2 cups (475 ml) sugar
  • 1 tsp (5 ml) salt
  • 1 tsp (5 ml) baking soda
  • 1 tsp (5 ml) ground cinnamon
  • 3 beaten eggs
  • 1-1/2 cups (350 ml) oil (Corn or Canola)
  • 1-1/2 tsp (7 ml) vanilla
  • 1 8 oz (224 grm). can crushed pineapple, drained
  • 1 cup (225 ml) chopped pecans
  • 2 cups (475 ml) mashed bananas
  • Frosting Ingredients:
  • 1 cup (225 ml) whole pecans (you can use chopped if you'd like )
  • 1 8 oz (224 grm). pkg cream cheese
  • 1/2 cup (125 ml) to 1 cup (225 ml) soft butter. Increase for thinner consistency.
  • 1 16 oz (448 grm). box powdered sugar
  • 1 tsp (5 ml) vanilla
Preparation
  • Cake Directions:
  • Combine all the dry ingredients; add eggs and oil and stir until moist. Do not beat.
  • Add vanilla, pineapple, pecans and bananas.
  • Stir until all ingredients are incorporated into the batter.
  • Spoon into a greased and floured bundt or tube pan.
  • Bake at 350 degrees (175 C.) for 1 hour or until a toothpick comes out clean.
  • Frosting Directions:
  • Combine cream cheese and butter until soft.
  • Add powdered sugar and vanilla; mix well.
  • Frost cooled cake.
  • Sprinkle pecans on top for garnish.
  • Keep cake in refrigerator for fresh flavor and quality.
