- 2 lbs (.9 kg). pork loin, cubed
- 1 package of taco seasoning
- 2 tbsp (30 ml) parsley flakes
- 2 tbsp (30 ml) olive oil
- 1 large jar picante or salsa
- 1 cup (225 ml) peach preserves
- cooked rice
- Mix cubed pork, taco seasoning and parsley flakes.
- In skillet with olive oil, add seasoned pork cubes and cook about 4 minutes on medium heat.
- When pork is cooked add picante and peach preserves.
- Serve over rice.
- Wonderful and easy.
