One thing I've learned as both a vegetable lover and a shish-kebab maker is that a varied, colorful skewer may be pretty, but it doesn't cook the vegetables evenly. Think about how long you would cook each item on the stove and use that to stagger the time you place them on the grill. Raw onions and burnt tomatoes just don't go together! Good luck!
