Polish Beets

Serves/Makes:5 or more

Ingredients
  • 5 or more medium-sized beets
  • 2 sour apples
  • 1 tsp (5 ml). bacon fat
  • 2 tbsp (30 ml) to 3 tbsp (45 ml). sour cream
  • 1-1/2 tbsp (20 ml). flour
  • salt and pepper to taste
  • lemon juice to taste
  • sugar to taste
Preparation
  • Peel beets and apples and grate coarsely, reserving all the juices.
  • Melt bacon fat.
  • Add grated beets and apples and their juices.
  • Season with salt and pepper, and add lemon juice and sugar to taste.
  • Simmer, covered, for 30 minutes.
  • Remove cover and reduce liquid.
  • Combine flour with sour cream then add and let bubble up.
  • Simmer a few more minutes.

I hope this is what you were looking for. It's the only thing I could think of that uses shredded beets.
