- 1 cup (225 ml) sugar
- 3 tbsp (45 ml) flour
- 1/4 tsp (1 ml) salt
- 2 eggs
- 2 cups (475 ml) milk
- 2 tbsp (30 ml) butter
- 1 tsp (5 ml) vanilla
- Preparation
- In large glass mixing bowl, whisk together sugar, flour, and salt.
- Add 1 egg and 1/4 cup (60 ml) milk.
- Whisk well.
- Add second egg and rest of milk, 1/2 cup (125 ml) at a time.
- Whisk well.
- Microwave on high approximately 8 to 10 minutes, whisking every two minutes.
- Remove from microwave when it thickens.
- Whisk in butter and vanilla.
- Comments
- This is a great pudding for trifles, pies, banana pudding or just to eat with a plain cookie.
To make it richer replace the milk with half and half.
