- Ingredients
- 1/4 cup (60 ml) olive oil
- 1/4 cup (60 ml) red wine vinegar
- 1 tsp (5 ml) fresh thyme chopped
- 1 tsp (5 ml) fresh basil chopped
- 1 tsp (5 ml) oregano leaves chopped
- 1 tsp (5 ml) minced garlic
- 1/2 tsp (2 ml) salt
- 1/2 tsp (2 ml) pepper
- 2 lbs (.9 kg). veggies such at bell peppers, asparagus, zucchini, potatoes, onion, eggplant
- Preparation
- Put veggies in shallow dish and marinade 2 hrs. covered.
- Grill veggies 6 inches from heat, brush with marinade when needed.
