Herb Marinade Grilled Veggies

Serves/Makes:8 (double up for party)

Ingredients
  • 1/4 cup (60 ml) olive oil
  • 1/4 cup (60 ml) red wine vinegar
  • 1 tsp (5 ml) fresh thyme chopped
  • 1 tsp (5 ml) fresh basil chopped
  • 1 tsp (5 ml) oregano leaves chopped
  • 1 tsp (5 ml) minced garlic
  • 1/2 tsp (2 ml) salt
  • 1/2 tsp (2 ml) pepper
  • 2 lbs (.9 kg). veggies such at bell peppers, asparagus, zucchini, potatoes, onion, eggplant
Preparation
  • Put veggies in shallow dish and marinade 2 hrs. covered.
  • Grill veggies 6 inches from heat, brush with marinade when needed.
