- Ingredients
- Herbal:
- 1/4 cup (60 ml) white wine vinegar
- 1 tbsp (15 ml) chopped tarragon
- 1 tbsp (15 ml) chopped parsley
- 2 tbsp (30 ml) chopped chives
- 1/4 cup (60 ml) olive oil
- 1/4 cup (60 ml) whipping cream
- salt and pepper
- Assertive:
- 1 tbsp (15 ml) chopped shallots
- 1 tbsp (15 ml) chopped red onion
- 1 tsp (5 ml) chopped garlic
- 1 tbsp (15 ml) grainy mustard
- 1/4 cup (60 ml) red wine vinegar
- 1/2 cup (125 ml) olive oil
- salt and pepper
- 2 tbsp (30 ml) chopped parsley
- Preparation
- Herbal:
- Whisk vinegar, tarragon, parsley, and chives.
- Slowly add oil, and cream.
- Dressing should emulsify to a light cream base.
- Season to taste.
- * always mix cream in at last minute.
- * use mixed lettuce.
- Assertive:
- Combine shallots, red onion, garlic, and mustard.
- Whisk in red vinegar and oil.
- Season to taste and stir in parsley.
- Toss with salad.
- *use strong flavoured lettuce such as escarole or watercress.
- Comments
- Serve herbal salad with Californian Fume Blanc and the Assertive with Australian Chardonnay.
