- 1 avocado
- 3 tbsp (45 ml) lime juice
- 3 tbsp (45 ml) cider vinegar
- 1/4 cup (60 ml) chopped cilantro
- 1 clove garlic, chopped
- 1-1/3 cups (325 ml) olive oil
- 1 egg yolk
- 1/3 cup (80 ml) cream
- 1 tsp (5 ml) salt
- Combine avocado, lime juice, vinegar, garlic and oil in a blender and process until smooth.
- In a mixing bowl, whisk egg yolk briefly, then slowly whisk in the avocado mixture.
- Stir in cream and season with salt
