Serves/Makes:1 9 x 13 inch pan
- Ingredients
- Coffeecake:
- 2 cups (475 ml) flour
- 1 cup (225 ml) sugar
- 1/2 cup (125 ml) brown sugar
- 1 tsp (5 ml). baking soda
- 1 tsp (5 ml). baking powder
- 1/2 tsp (2 ml). salt
- 1 tsp (5 ml). cinnamon
- 1 cup (225 ml) buttermilk (1 tbsp (15 ml). vinegar plus milk to equal 1 cup)
- 2/3 cup (150 ml) shortening
- 2 eggs
- Topping:
- 1/2 cup (125 ml) brown sugar
- 1/2 cup (125 ml) chopped nuts
- 1 tsp (5 ml). cinnamon
- 1/2 tsp (2 ml). nutmeg
- Preparation
- Grease and flour bottom of 9x13 inch pan.
- In a bowl combine all cake ingredients.
- Beat 3 minutes at medium speed.
- Pour into pan and top with crumb mixture.
- Cover and refrigerate overnight.
- Bake 30-40 minutes at 350 degrees (175 C.).
