Sissy's Kentucky Chess Pie

Serves/Makes:1 9" pie

Ingredients
  • 1/2 cup (125 ml) real butter, at room temperature
  • 1-1/2 cups (350 ml) sugar
  • 3 eggs
  • 1 tsp (5 ml). vanilla flavoring
  • 1 tsp (5 ml). white vinegar
  • 1 tbsp (15 ml) corn meal
  • 1 unbaked 9 inch pie crust
Preparation
  • Preheat the oven to 350 degrees (175 C.).
  • Completely mix the butter and sugar together.
  • Add the eggs, one at a time, mixing well after each addition.
  • Add the vinegar, vanilla and the corn meal and then pour it into the pie crust.
  • Bake for 45 minutes or until slightly brown on top.
  • Note: to make a lemon chess pie, just add 1/4 cup (60 ml) of lemon juice and a little of the grated lemon rind, and you may want to add a little more sugar to make it 2 cups (475 ml) of sugar.

Chess pie is a southern pie, and is really rich, there are all kinds of variations to it, some people put regular milk or canned milk (evaporated milk, as you non southerns call it ) in it, some people put whipped cream in it, some people put flour in it instead of cornmeal. Some people do not put the vinegar in it. But this is how I like it. So there. Ha. Sissy
