Serves/Makes:make one per person
- Ingredients
- all ingredients per person:
- 1 boneless skinless chicken breast
- 2 thin slices of onion
- 3 tbsp (45 ml) instant rice
- 3 tbsp (45 ml) cream mushroom soup
- 2 tbsp (30 ml) chopped mushrooms
- whatever herbs you want to add to mushroom soup
- Preparation
- Preheat oven to 350 degrees (175 C.).
- Spread piece of foil for each person to be served.
- Place one piece of chicken on each piece of foil.
- Put sliced onion on chicken.
- Put instant rice over onion.
- Mix soup and mushrooms and and whatever herbs you like.
- Spoon over rice.
- Close piece of foil to make a little envelope folding to seal all edges.
- Place foil packets on a cookie sheet.
- Bake at 350 degrees (175 C.) for 45 minutes.

- I've baked this for one and for twenty at a time
Easy to serve and no cleaning up to do
Serve with al dente vegetables and a nice salad
All food groups are there...
