- Carrot Cake:
- 4 eggs
- 2 cups (475 ml) sugar
- 1-1/2 cups (350 ml) oil
- 2 cups (475 ml) flour
- 2 tsp (10 ml). baking soda
- 2 tsp (10 ml). salt
- 2 tsp (10 ml). cinnamon
- 4 cups (950 ml) grated carrots
- 1 cup (225 ml) nuts (optional)
- Cream Cheese Frosting:
- 1/2 cup (125 ml) soft butter
- 8 oz (224 grm). cream cheese (softened)
- 3 tsp (15 ml). water
- 2 tsp (10 ml). vanilla
- 3 cups (700 ml) icing sugar or powdered sugar
- Preparation
- Carrot Cake:
- Mix all ingredients together.
- Bake in greased 9 1/2 inch by 13 inch pan at 350 degrees (175 C.) for 45 minutes.
- Let cake cool before frosting.
- Cream Cheese Frosting:
- Mix all ingredients until smooth.
- Spread over cooled carrot cake.
