Peanut Brittle

Serves/Makes:2 lbs.

Ingredients
  • 1 cup (225 ml) light corn syrup
  • 2 cups (475 ml) white sugar
  • 2/3 cup (150 ml) peanuts
  • 2 tbsp (30 ml) butter
  • 2 tsp (10 ml) vanilla
  • 2 tsp (10 ml) baking soda
Preparation
  • In a 3 quarts (2850 ml) casserole dish (not metal), combine syrup, sugar, and peanuts.
  • Microwave on high for 12 minutes.
  • Stir in butter and vanilla.
  • Cook on high for 4 minutes.
  • Stir in baking soda.
  • Pour onto buttered cookie sheet; cool and break into pieces.
