Crumbled Blue Cheese Vinaigrette
Serves/Makes:1/2 c. or more
- 1/4 cup (60 ml) wine vinegar
- 1/4 cup (60 ml) olive oil
- 2 tsp (10 ml) Dijon mustard
- 2 tsp (10 ml) minced garlic
- salt & pepper
- 1 tbsp (15 ml) thyme or basil leaves
- crumbled bleu cheese
- honey roasted pecans
- rice noodles for extra crunch (optional)
- Blend all ingredients, except cheese, pecans and noodles.
- Add remaining ingredients and toss with salad.
- Unfortunately, no amounts were given for cheese or pecans.
