- 2-1/3 cups (550 ml) sifted confectioners' sugar
- 1/4 tsp (1 ml) salt
- 1 lemon juice
- 1/4 cup (60 ml) granulated sugar
- 1/2 cup (125 ml) shortening
- 1 tbsp (15 ml) grated lemon rind
- Mix confectioners' sugar, salt and egg.
- Boil lemon juice and granulated sugar together for 1 minute.
- Add shortening and lemon rind.
- Beat all ingredients together until creamy.
- Spread on cooled cake.
