- Meatloaf with a kick
Serves/Makes:6 servings
- Ingredients
- 6 oz (168 grm). pkg. garlic seasoned croutons
- 1/2 tsp (2 ml). ground black pepper
- 1/2 tsp (2 ml) cayenne pepper
- 1 tsp (5 ml). chili powder
- 1 tsp (5 ml). dried thyme
- 1/2 onion, finely chopped
- 1 carrot, finely chopped
- 3 cloves garlic, minced
- 1/2 red bell pepper, finely chopped
- 1 lb (.5 kg). ground chuck
- 1 lb (.5 kg). ground sirlion
- 1-1/2 tsp (7 ml). kosher salt
- 1/2 cup (125 ml) catsup
- 1 tsp (5 ml). ground cumin
- dash of Worcestershire sauce
- dash of hot pepper sauce
- 1 tbsp (15 ml) honey
- Preparation
- Heat oven to 325 degrees (175 C.).
- In a food processor combine croutons, black pepper, cayenne pepper, chili powder, and thyme until fine.
- Add carrot, onion, garlic, and bell pepper and pulse to combine.
- Add meat to mixture with egg and salt and pepper. Mix throughly but avoid squeezing the mixture.
- Pack mixture loosely into a loaf pan and place in oven.
- Bake to an internal temperature of 155 degrees (70 C.).
- Combine catsup, pepper sauce, and honey and brush glaze into to the meatloaf after 10 minutes of cooking.
- Comments
- This is a great recipe to experiment with the seasonings.
Serve with garlic mashed potatoes and green beans for a complete dinner.
