Serves/Makes:1 meat loaf
- 1 lb (.5 kg). ground beef
- 1 lb (.5 kg). bulk sausage
- salt and pepper, to taste
- 3/4 cup (175 ml) crumbled corn flakes, cracker or bread crumbs
- 3 eggs
- 1/2 tsp (2 ml) garlic powder
- 1 onion, chopped
- 2 tbsp (30 ml) oil
- 5 medium potatoes, fixed like hashbrowns or shoestring potatoes
- Put a large Dutch Oven on a medium heated burner and add the 2 tbsp (30 ml) oil. Let it get hot.
- In the mean time, mix together the meat, salt, pepper, crumbs, eggs, garlic powder, and onion throughly and make into a firm round patty.
- Put the patty into the Dutch Oven with the hot oil. You should have about 1 to 1 1/2 inch left all around the patty.
- While browning the patty, peel and slice or dice the potatoes and set aside.
- Carefully flip the meat patty over and then add the potatoes around the meat patty.
- Cover the Dutch Oven with the lid and cook on medium-low heat for 50 to 60 Minutes.
- NOTE: You could probably use a 2 lbs (.9 kg). bag frozen shredded hashbrowns, but thaw them out first.
- This recipe was given to me by a childhood friend. Dianne and I were about the only girls in the neighborhood, most of them were boys. We lived in the country so it was not like you ran over next door to play we probably lived about 1 mile from each other. Dianne was 2 years older than me, so she was the boss, ha. I wore her hand-me-down clothes and was glad to get them. Her dad was our preacher and most of the time had a public job as well at Modine's, which is where they made batteries, I think. Anyway, they had a better living than my family did. My mom was a single parent of 4 kids, with no help from our dad. She had it tough, but we made it. What does not kill you will make you stronger, and it did.
Dianne is still in my life. She had two brothers, Dolph and her twin brother, Don. Don has a special place in my heart, he always took up for me, and in a neighborhood of mostly boys, you needed someone. But Dianne and I learned to "fight or die" and we are both living. Ha.
This is a really good!You can use 2 lbs. beef instead of beef and sausage.
