Serves/Makes:8 or more

Ingredients
  • Filling:
  • 3 cups (700 ml) cooked, mashed sweet potatoes
  • 1 cup (225 ml) granulated sugar
  • 2 eggs
  • 1/2 tsp (2 ml). salt
  • 1 tsp (5 ml). vanilla
  • 1/3 stick margarine or butter
  • 1/2 cup (125 ml) milk
  • Topping:
  • 1 cup (225 ml) brown sugar
  • 1/3 stick margarine or butter
  • 1 cup (225 ml) chopped nuts (I use pecans)
  • 1/3 cup (80 ml) all-purpose flour
Preparation
  • Mix together the first 7 ingredients and pour into a greased oblong (about 12 inch x 7 1/2 inch) baking dish.
  • Mix together the last 4 ingredients and spread over the top of the mixture.
  • Bake at 350 degrees (175 C.) for about 35 minutes.
Comments
If your heart is set on marshmallow topping, you can omit this topping and during the last few minutes of baking, top with miniature marshmallows. You need to watch the marshmallows as they will melt quickly and you want them to just brown and not burn.

At any rate, you need to try this recipe as written at least once as we have served it to people who claim to "hate" sweet potato pie & they loved it! It really tastes more like a dessert.
