Serves/Makes:1 cup

  • 1 cup (225 ml) mayonaise
  • 1/4 cup (60 ml) sweet pickle relish
  • 2 hard boiled eggs, grated or chopped
  • 2 tbsp (30 ml) lemon juice
  • 1 tbsp (15 ml) chopped pimento
  • black pepper to taste
  • Boil eggs, and grate or chop.
  • Chop pimeto finely.
  • Mix mayonaise, eggs, sweet relish, pimentos, lemon juice,and black pepper and stir till blended.
  • Chill about 1 hour and serve.
